Bei der Sektherstellung nach der traditionellen Methode (Méthode traditionnelle) wird der Grundwein versehen mit Hefe bereits in der Originalflasche gereift. Die Flaschen werden mit einer Bidule und einem Kronenkorken verschlossen und gelagert, sodass sich Kohlensäure ausbilden kann. Dabei kann der Druck gegenüber Atmosphärenniveau auf etwa 6 bis 8 bar steigen. Während der Lagerzeit muss der Verlauf der Reife anhand von Stichproben überwacht werden. Es werden also Flaschen repräsentativ für eine Charge entnommen, die dann durch ein Anstechmanometer auf den Flascheninnendruck geprüft werden. Der Druck in den Flaschen lässt nun auf den Reifegrad schließen, und gibt Aufschluss über eventuell mangelhafte Qualität von Hefe, Grundwein, Sauberkeit, etc. Die so geprüften Flaschen gehen dabei durch das Anstechen für den weiteren Produktionsverlauf verloren. Bei dem hier neu vorgestelltem Verfahren wird die Tatsache verwendet, dass sich das Blech des Kronenkorken durch einen Druckanstieg im Inneren mehr oder weniger stark verformt. Bei Kenntnis der Krümmung kann somit auf den Druck in der Flasche geschlossen werden. Neben dem offensichtlichen Vorteil, dass die Flaschen nun für die weitere Produktion nicht verloren gehen, kann von einer ausgewälten Flasche nun erstmals auch der Druckverlauf und somit der Reifeprozess aufgezeichnet werden. Zusätzlich können eine größere Anzahl von Flaschen und kürzere Messintervalle erfasst werden, ohne dass es zu einem wirtschaftlichen Nachteil für das Unternehmen kommt. Im Gegenteil, da durch die angeführten Vorteile sogar mit einer Steigerung der Qualität zu rechnen ist. Die Messung an sich erfolgt optisch, d.h. die Krümmung des Kronenkorken wird mit einer Kamera erfasst und anschließend mit einem Computer mittels Bildverarbeitung ausgewertet. Hier kann der berechnete Druck auch gespeichert werden, damit der zeitliche Verlauf der Reife dargestellt und analysiert werden kann.<br />

According to the traditional method of sparkling wine production (Méthode traditionnelle), yeast and wine are put together in the prospective original bottle which is capped with a crown cap for fermentation. In that period of time the pressure inside the bottle increases from atmospheric level to about 6-8 bars. During storage of the arising sparkling wine, ripeness is evaluated by taking random samples. Selected bottles, which are representative for a production charge, are measured with a broachmanometer to evaluate the internal pressure. The established pressure gives insight in the stage of maturity. In addition, unexpected low pressure is a sign of quality issues, such as insufficient yeast productivity. In any case, all bottles of sparkling wine inspected this way are lost for further usage. A solution to this problem is a new technique which is introduced here. Since the crown cap is made of sheet metal, a change of pressure results in a bending of the surface, which is proportional to the pressure inside the bottle. Vice versa, from the crown cap bending curve the pressure can be derived. The measuring equipment is based on an optical principle. A digital camera records the crown cap buckling and a computer calculates thereof a pressure value by image processing. The derived values are stored and a chronological chart can be displayed and analyzed. Next to the obvious advantage of not losing the inspected bottle for future production, for the first time it is possible to record the progress of pressure during ripening and finally the fermentation- process devolution. Further advantages of this method are the larger amount of measurable bottles and shorter metering intervals without economic losses. Higher information density results in substantially higher quality and monitoring benefits.
