Abstract:
Die französische Region Charente-Maritime gehört zu den führenden Muschelzentren in Europa und ist sehr bekannt für ihre Austernzucht. Die Geschichte der Austern an der Atlantikküste reicht bis ins 19. Jahrhundert zurück und entwickelte sich zu einem wichtigen Bestandteil der maritimen Kultur. Heute ist sie eine beliebte Delikatesse, welche weltweit konsumiert wird. Im Fokus dieser Diplomarbeit steht das Austernzentrum Oléron in der Bucht von Marennes-Oléron. In diesem Projekt werden die Themen „Entdecken, Verstehen und Schmecken“ miteinander kombiniert. Neben einem Restaurant, welches regionale Spezialitäten anbietet und einer Austernbar, fungiert das Zentrum als Lern- und Erlebnisort für Besucher und Köche gleichermaßen. Workshops über die Zubereitung von Austern sowie geführte Wattwanderungen und Bootsausflüge ermöglichen es, die Austern und die Arbeit der Austernzüchter hautnah zu erleben. Ein weiterer Schwerpunkt liegt in der Weiterentwicklung der Baustoffforschung, welche untersucht, inwiefern Austernschalen nachhaltig recycelt und als Baumaterial wiederverwendet werden können. Der Bauplatz liegt im Südosten der Île d‘Oléron und befindet sich 700m vor der Küste auf alten bestehenden Betonfundamenten. Bei dem Haupttragwerk des Austernzentrums handelt es sich um eine Stahlrahmenbau mit integrierten Fachwerken, wobei die umlaufende Glasfassade einen 360° Rundumblick auf die Austernbänke ermöglicht. Zudem erreicht man das Austernzentrum über den ehemaligen Fähranlegerzufahrt, als auch mit dem Schiff und somit vereinigt es Architektur mit der Geschichte des Orts und den Traditionen der maritimen Lebens. Das Austernzentrum Olèron hat das Ziel, eine touristische Attraktion und ein Zentrum für kulinarischen Genuss zu werden, während gleichzeitig die regionalen Traditionen bewahrt und die Sensibilisierung für Nachhaltigkeit und Umweltschutz gefördert werden.

The French region of Charente-Maritime is one of the leading shellfish centres in Europe and is well known for its oyster farming. The history of oysters on the Atlantic coast dates back to the 19th century and has developed into an important part of maritime culture. Today it is a popular delicacy that is consumed worldwide. This thesis focuses on the Oléron oyster centre in the bay of Marennes-Oléron. This project combines the themes of ‘discovering, understanding and tasting’. In addition to a restaurant offering regional specialities and an oyster bar, the centre functions as a place of learning and experience for visitors and chefs alike. Workshops on the preparation of oysters as well as guided mudflat walks and boat trips allow visitors to experience oysters and the work of oyster farmers at first hand. Another focus is on the further development of building material research, which investigates the extent to which oyster shells can be sustainably recycled and reused as a building material. The construction site is located in the south-east of the Île d'Oléron and is 700 metres off the coast on old existing concrete foundations. The main structure of the oyster centre is a steel frame construction with integrated trusses, whereby the surrounding glass façade allows a 360° panoramic view of the oyster beds. In addition, the oyster centre can be reached via the former ferry landing stage as well as by boat, thus combining architecture with the history of the place and the traditions of maritime life. The Olèron Oyster Centre aims to become a tourist attraction and a centre for culinary enjoyment, while at the same time preserving regional traditions and promoting awareness of sustainability and environmental protection.
