Abstract:
In der vorliegenden Arbeit wird die Entwicklung des Wiener Heurigen und die damit verbundene Wiener Heurigenkultur aus architektonischer Sicht untersucht. Die Einführung in die Thematik bildet die Geschichte des Wiener Weinbaus und dessen einzigartige geographische Lage in einem von pannonischen, kontinentalen und mediterranen klimatischen Einflüssen geprägten Raum. Im Anschluss wird der Terminus Heuriger im Hinblick auf Etymologie, Betriebsumfang und gesetzliche Rahmenbedingungen bezugnehmend auf Wien erläutert, um eine korrekte Auswahl der zu untersuchenden Gebäude für diese Arbeit zu gewährleisten. Darauf folgt ein historischer Rückblick, um die Ursprünge des Wiener Heurigen in baulicher Hinsicht aufzuzeigen und seine spätere Entwicklung zu verdeutlichen. Das primäre Ziel der Arbeit ist es zu erforschen, ob aus den existierenden Wiener Heurigen ein idealtypischer Bautyp abgeleitet werden kann und welche Merkmale dafür ausschlaggebend sind. Hierzu werden verschiedene Heurigen in Wien exemplarisch herangezogen, um Gemeinsamkeiten in deren architektonischer und funktioneller Gestaltung zu analysieren. Obwohl sich gegenwärtig unter dem Schlagwort Heuriger ein weiter Bogen von sogenannten -Nobelheurigen- bis hin zu ausgeprägten Tourismusbetrieben spannt, sind trotz der unterschiedlichen kommerziellen Ausrichtung des jeweiligen Gebäudes dennoch wesentliche architektonische Analogien zu erkennen. Als Forschungsmethode dient die Einsicht in Bauakten und die entsprechenden Baupläne, Fotographien, diverse schriftliche Quellen sowie Interviews mit den jeweiligen Heurigenbetreibern sowie deren Besuchern. Bisherige Forschungsarbeiten zur Thematik der Wiener Heurigen betrafen lediglich die Bereiche Tourismus, Ausschank und Weinbau. Die aus dieser Arbeit resultierenden Erkenntnisse sollen, sowohl der Architektur selbst als auch den Heurigenbetrieben den Weg für zukünftige Entwicklungen weisen, um die architektonische Identität des Wiener Heurigen zu bewahren.

The present paper examines the development of the -Wiener Heurigen- (a typical Viennese wine tavern) and the respective connected wine tavern culture based from an architectural point of view. The introduction into the topic is formed by the history of the Viennese viticulture and its uniqueness on the basis of its geographic situation within an area exposed to Pannonic, Continental and Mediterranean climatic influences. Moreover the term of -Heuriger- is explained with regard to its etymology, company extent and its regulatory framework to ensure a correct selection of buildings to be examined for this paper. It will be followed by a historical review in order to illustrate the origins of the -Wiener Heurigen- with regard to its architecture and its subsequent developments. The main objective of this paper is to investigate if an ideal building type can be derived from existing -Wiener Heurige- and which are the respective the determining factors for it. For this purpose an exemplary selection of different Viennese -Heurige- will be used to analyse common characteristics in both its architectural and functional design. Although the current term of -Heuriger- covers a wide gamut from so-called upper-class -Heurige- to distinctive tourist attractions and despite different commercial orientations and there are still architectural analogy to be discovered among them. As research methodology serves the examination of the respective official records and construction plans, photographs, other sources in written from as well as interviews with innkeepers running a -Heurigen- and its guests. Current research projects regarding the topic of the -Wiener Heurigen- focused only on the topics of tourism, beverage services and winegrowing.
